The Pernumia asparagus has a peculiarity that sets it apart from the others: it is not very fibrous, so it is much more versatile in the kitchen.

The art of marrying an elegant blue cheese with a native wine is part of the success of this splendid experience called Blu ’61®, aged in Raboso Passito and accompanied by fine cranberries in the rind. A true jewel to meditate on. 50 years of marriage to Giuseppina inspired Antonio to “freeze” his love in time.

SIGHT: A splendid fusion of the grape marc of the rind and the red of the cranberries. It looks like a dessert from a haute pâtisserie. When cut, you can appreciate the fine, widespread marbling in green and ocean blue running through the cream-coloured paste.

TOUCH: Soft, tending to creamy on the surface with the warmth of the skin, it surprises with the soft consistency of the marbled paste thanks to the action of the wine. The rind in contact with the wine takes on a firm texture and breaks cleanly into portions with jagged edges.

SMELL: The symphony of aromas strikes the chords of our senses, surprising with the harmony of the blue veining that turns sweet. The scent of marasca cherry and dried fruit goes well with the vinous notes in the rind.

TASTE: The end of this journey is the mouth. It turns creamy and fills the palate with blue-cheese notes that are never sharp, pleasant and in perfect balance with the sweetness of the vinous notes of the Raboso passito. As Antonio Carpenedo says, cheese always starts with an idea. Blugins was born on the occasion of Antonio’s 50th anniversary in the business. The family came up with an original idea: pairing cheeses with cocktails and, thanks also to the collaboration with a great Treviso bartender, specific cocktails were created for the occasion to go with our creations.

From this path of strong innovation and research, the Carpenedo Family decided to share this project with Roberto Marton and his prestigious Gin.

After two years of trials, in 2017, the right T.U.T.A. (Temperatura, Umidità, Tempo e Ambiente: temperature, humidity, time and environment) was finally found. And here is an intriguing cow’s milk blue cheese that marries perfectly with one of the world’s best-loved spirits.

The name Blugins crowns a product that aims at contemporary style and innovation of taste. Gin and cheese are not only a perfect pairing from a sensory and gastronomic point of view, they also represent the fusion of cultures, stories and passions that speak of the desire for pleasure and beauty. Blugins is dedicated to those who dislike the banal, to those who love to dare at the table and in life.

SIGHT: Blugins is wrapped in an ingenious packaging that recalls an original fabric pocket. The pearly white of the wheel is enriched with small flakes of the spices used in the distillation of the gin. When cut, you can appreciate the compactness and homogeneity of the veining and the particular creaminess of the paste.

TOUCH: The paste is compact and at the same time delicately creamy. The veining does not form a drop as in the most common blue cheeses but remains impalpable and delicately melted into the paste, thanks to the action of the Gin.

SMELL: A fragrant creation, a little alcoholic, sweet, elegant, fine and decidedly intriguing. Sensations of fine aromatic herbs and floral pleasantness blend pleasantly with the fragrant essence of the blue-veined cream.

Conciato al pepe (“pepper-cured”) – hard cheese aged in barrique with black pepper

🧀 Hard cheese aged in barrique with black pepper.

Antonio Carpenedo is fascinated by spices, their aromas and their origins. This small seed contained in a red berry is native to southern India and grown in tropical areas.

The fresh cheese is properly aged and, at the perfect moment, sealed in oak barrels with a jealously guarded blend of pepper. The barrels filled in this way follow a precise rotation schedule to allow a perfect transformation and transfer of flavours.

SIGHT: Cylindrical in shape, slightly irregular, the rind is dark in colour and rough in appearance owing to the massive presence of chopped pepper. The paste is straw-yellow in colour and slightly eyed.

TOUCH: Very distinctive to the touch on the rind, because of the chopped pepper. The paste is semi-hard and compact in consistency. Excellent for shaving into flakes.

SMELL: The unmistakable aroma of pepper evokes the distant bazaars of India, with a mix of scents of wood, flowers and a very faint lemon. In the paste, everything is wrapped in the intense scent of warm milk and butter.

TASTE: A gentle explosion of pepper. Piperine, the substance that gives pepper its spicy flavour, is pleasantly balanced by the properties of the cheese, with notes of milk and butter.

Cheese made from cow’s milk, aged for at least 4 months and then immersed in tanks with grape marc and dry wine. Antonio Carpenedo’s method involves precise immersion sessions, followed by periods of rest and drying, taking into account T.U.T.A., the Italian acronym for Temperatura, Umidità, Tempo e Ambiente (Temperature, Humidity, Time and Environment), essential conditions for imparting aromas and flavours to the cheese. A living material that must be respected and guided towards perfect transformation, which requires artisanal attention for every wheel, every batch, on every single day of production.

Ubriaco al Prosecco (“drunken” cheese) has a delicate, fresh and fruity taste with a pleasant acidic sensation. A cheese that can be described as suitable for the whole meal.

Cheese with a thin rind of ochre-yellow colour and a slightly eyed paste of straw-yellow colour. Semi-hard cheese, pleasant to the touch, it breaks easily into portions with irregular edges.

The fresh, citrusy notes imparted by the dry wine blend perfectly with the delicate fruity and vegetal scent typical of milk from local farms. The delicate taste is enriched by hints of citrus and green apple typical of dry-wine marc. The herbaceous and dried-fruit notes pair well for aperitifs accompanied by fresh, fruity wines.

The cheese Ubriaco di Raboso (“drunken” cheese) is the first creation by Antonio Carpenedo among his Cellar Cheeses, dating back to 1976, and it gave rise to the Ubriaco brand. A success more than 40 years old, during which experimentation and the compromise with high quality have never ceased.

Ubriaco di Raboso is a cow’s milk cheese with a rind that takes on the classic grape-marc colour, a testimony to the careful “ubriacatura” (wine-soaking) method that turns the paste a deep yellow with rare, small eyes.

Ubriaco di Raboso cheese gives fruity notes of wild blackberry and marasca cherry. The vinous notes are delicate and persistent, wrapped in a delicate but decisive, slightly spicy taste.

1997, summer, an outing in the mountains he loves so much. It happens by chance, as so often in life, that Antonio meets the master brewer at the foot of the Dolomites, who manages to spark his curiosity.

He draws him passionately into a world largely unknown to him: beer.

A beer made with passion, combining local products such as barley and mountain water. The time of nature that rules supreme in the fermentation processes.

The patience of those who know how to wait for the right moment. He recognises himself in that way of conceiving flavours and decides to transfer the emotion of that encounter into his cheese.

Thus begins the adventure of experimenting, of waiting patiently for the result of many trials to one day taste the perfect Dolomitico, carefully aged, transformed with that unique beer, the protagonist of a chance encounter, a spark of creativity.

SIGHT: Of cylindrical proportions, it is uniformly amber in the rind with decidedly darker veins. When cut, it is milk-coloured and finely blue-veined, with a vertical prevalence of the moulds.

TOUCH: Extraordinarily pleasant to the touch, both for its size and for its consistency, which lies between semi-hard and soft. Easy to taste with your fingertips, a perfect blend of softness and density.

SMELL: On the nose it surprises with its cowshed smell, which blends finely with the decidedly pronounced malt in the rind, perfectly balanced in the paste, where the fermentations give a characteristic hint of barley.

This biscuit stands apart from the rest of Carmelina’s early specialities because, in addition to the usual ingredients, it contains other flavours that make it unique and delicious.

Tantalising, bold and captivating, Peverini are typical Venetian sweets which, since the 1400s, were made with flour, molasses and pepper. According to some, they derive from original recipes of Ancient Greece, appreciated because they were the favourite and everyday food of the Pythagorean scholars, philosophers and sages.

This delightful biscuit was born more than two centuries ago, when, in the colourful houses of the island of Burano, housewives prepared sweet treats for their families with their own hands.

The Esse was created as an alternative to the traditional Bussolà. Its wavy shape recalls the course of the “Grand Canal”, which winds through Venice from Punta della Dogana to Piazzale Roma.

The artisanal production of this particular beverage has been preserved here for a long time, in full respect of the original recipe.

Brodo di Arquà is the original liqueur, known for its characteristic sweet taste and intense aroma.
